GRILLED CHEESE SANDWICH
Going up, I ate very few sandwiches. I had never had a grilled cheese sandwich. I was babysitting sitting for my neighbor, Mrs. Knight. She left me a note of task; one of the things on the list was to give her girls, Cindy and Verna, grilled cheese for lunch. I had absolutely no idea how to grill a piece of cheese and serve that for lunch. So I ran next door and asked my mom how to grill cheese. She had no idea either. She called my grandma. My grandmother laughed uncontrollably and told us grilled cheese was a sandwich.
2 teaspoons unsalted butter, 2 teaspoons mayonnaise, 4 slices of your favorite sandwich bread, 4 slices American or cheddar cheese.
Spread butter on 2 slices of the bread, one side only. Spread mayonnaise on 2 slices of bread, one side only. Get out a cast-iron skillet. Heat skillet to medium. Place one slice of bread mayonnaise side down. Add two cheese slices of cheese and the second piece of bread. Cook for about 2-minutes or until the bottom slice of bread is golden brown. Flip cook another 2-minutes or until golden brown. If your bread is not golden, flip until it is. Remove from the skillet, cut in half, and serve hot with a cup of tomato soup.
