STRIPED BASS

I met a very pleasant young man earlier this week, and he told me his friend had given him a striped bass; he asked me how to cook it. Depending on where you live in the country, striped bass is known by many other names like pimpfish or rockfish. The taste of the bass reminds me a lot of cod, sole, or tuna. This is a very versatile fish when it relates to how you can cook it. I commonly deep-fry, pan-fry, bake, grill, and poached striped bass. It’s a beautiful day, so we are going to grill our bass.
This recipe is for 4 fillets. First things first, we’re going to make a marinade. In a ziplock bag, add 1/8 cup extra virgin olive oil, 4 tablespoons fresh lemon juice, 3 minced garlic cloves, 1/4 teaspoon dried thyme, 1/2 teaspoon seafood bouillon, 1/8 teaspoon black pepper, and 1/4 cup dry white wine. Add the fish to the marinade, then refrigerate for at least 45 minutes. At the same time, the fish is being marinaded start up the grill. Drain the excess marinade off the fish and place it on the grill. It takes approximately 10-12 minutes for the fish to cook, 5-6 minutes on each side.
