An ancient Turkish saying is, “Every leaf of kale you chew adds another stem to your tree of life.  Kale is low in calories, high in fiber, and has zero fat.  Kale is an excellent source of vitamins A, C, E, and K and B1, B2, B6, fiber, calcium, potassium, iron, magnesium, omega 3 fatty acids, protein, folate, and niacin.

KALE SALAD

4 cups fresh kale, 1/8 teaspoon seasoning salt, 1 avocado, sliced, 1 cup strawberries, sliced, 1/2 cup pineapple, chopped, 1/3 cup pecans, roughly chopped, 1/8 cup red onions, sliced, 1/4 cup crumbled blue cheese.

First things first sprinkle salt over the kale. Rub the kale until the leaves turn a darker green. Rubbing the kale with salt darkens the color and tenderizes the greens.  Now remove the stems, roughly chop and put the kale in a large bowl.  Add the remaining ingredients and toss.  Dress with creamy Blue Cheese Dressing.
