CREAM FRITTERS

This is great Aunt Mary Lane’s recipe. She shared this recipe with me better than fifty years ago. Cream fritters look a lot like fried donut holes.

5 egg whites,1 cup evaporated milk, 2 cups cake flour, 1/8 teaspoon ground nutmeg, 1 teaspoon baking powder, 1/8 teaspoon salt.

Get out a bowl, add the cream while beating vigorously slowly add the egg whites and flour.  Add the nutmeg, baking powder, and salt. Continue to beat until the batter is thick.   Get out a skillet add 2 tablespoons of lard, heat to medium-high 325 degrees.  Scoop up a heaping tablespoon of the batter.  Roll into a ball, carefully add to the lard, and fry. Drain on paper towels.  Serve with jelly and dust with powdered sugar.
