STREAK-O-LEAN

My grandson says you have to be country as brown eggs to know what a Streak-O-Lean is. The question is how country are you? Streak-O-Lean is another name for salt pork. I have a couple of cousins coming over for brunch.  The plan is to hug, kiss, talk loud and have a happy time. The brunch menu is streak-o-lean, yellow grits, over-easy eggs, cat head biscuits, coffee, and mimosas. Yummy, yummy, yummy to our tummies! 

STREAK-O-LEAN

Parboil the salt pork for approximately 3-5 minutes in a combination of buttermilk and water to remove some of the salt. Remove the salt pork and pat it dry with paper towels.  In a cast iron skillet, add 1 tablespoon of vegetable oil, add the salt pork, fry until the salt pork is brown and crisp on both sides. Remove from the skillet, set aside on a paper towel to drain, then eat!
