VEGGIE WRAP

vTortilla’s origin is Mexico.  Flour tortillas are unleavened flatbread originally made by the Aztecs.  Tortillas date back before Jesus. Ray Gonzalez has written a poem honoring the tortilla.  Please take a moment to read “Praise the Tortilla.”

VEGGIE WRAP

8-10 (12-inch) flour tortillas, 11/2 cups refried beans, 2 1/2 T. sour cream,  1 cup baby spinach, 2 zucchinis, thinly sliced, 1 1/2 cup white cheese, 1/2 cup cucumbers, peeled and chopped, 1/2 cup thinly sliced red onions, 1 green onion, sliced, 1/4 cup chopped cilantro, 2 large avocado thinly sliced, 2 T. chopped fresh jalapeno peppers, 2 T. minced garlic, 1 T. chili powder, 1 tsp. dried oregano, 1 T. seasoning salt, 1 T. black pepper

Get out a skillet add 1T. avocado oil cook until you start to smell the garlic.  Add the zucchini cook until the zucchini starts to brown and softens.  Not to soft, you still want a little crunch. Sprinkle the chili powder, oregano, salt, and pepper on top.  Get out the tortillas, spread the cream cheese, and refried beans on the tortillas.  Add the zucchini layer the remaining ingredients listed above down the bottom one-third of the tortilla.  Wrap and fold the filled tortilla. Garnish with chopped walnuts, black olives, cilantro, and shredded iceberg lettuce.
