GINGER SAUCE AND PICKLED GINGER

A friend just gave me a lot of ginger. I am making ginger sauce.   The first time I had ginger sauce was at Benihanas on my steak.  I also use this sauce when I make pesto salmon steaks

1 large yellow onion, chopped, 1/4 cup fresh ginger peeled and chopped, 1 cup soy sauce, 1 tsp. light brown sugar, 1/8 tsp. unsalted butter, 2 1/2 T. white vinegar, 2 T. fresh lemon juice, Zest of 1 lemon

Get out the food processor.  Add everything blend until you have a paste.  Do not make this sauce smooth.

PICKLED GINGER

1/2 cup fresh ginger, peeled, 1 tsp. salt, 1/2 tsp. chicken bouillon, 1 cup rice vinegar, 1/8 cup raw honey, 1/8 tsp. red pepper flakes.

Add the ginger, and salt in a bowl, combine and set aside.  In a saucepan, add the remaining ingredients, bring to a boil, reduce to a simmer cook for 5-minutes.  Pour over the ginger.  Refrigerate.  When cool, slice into paper-thin strips.
