The other day I cooked fried catfish fillets, cilantro lime rice, and a simple salad. I had quite a bit leftover. My next job was to repurpose that meal. The new dish is fish and rice tacos
Cut up the fillets and add 1/4th of that amount of rice. Mix well, taste, add fish seasoning and black pepper, and set aside. Dress the tacos with shredded cabbage, cheddar cheese, chopped cilantro, red onions, tomatoes, jalapeno pepper, and avocado salsa, served on fried corn tortillas.
