
The question is, how am I going to feed all these people and stay on budget? Well, the $.99 Store is my savior. I purchase a bag of red onions, yellow squash, and Italian squash. The packages are so big, and the squash is so fresh you can prepare a side dish that will feed at least 25-people
1/8 cup bacon grease, 2 red onions, the entire bags of yellow and Italian squash, sliced into 1/4-inch circles, 1 teaspoon sugar, 1 tablespoon dried thyme, 2 cloves garlic, minced, salt and pepper to taste.
Pan frying the squash will bring outs all its flavor and sweetness. Get out your cast iron skillet. Add the bacon grease, when the grease heats up add the onions and saute until they start to brown around the edges. Add the squash. When the squash starts to sweat sprinkle the sugar on top. Reduce the heat to medium and stir. When the squash starts to soften, not too soft you want it with a little crisp bite. Add the thyme, salt, and pepper, stir, cook for another couple of minutes, and serve.
The next question, what else is on the menu? I think I will buy 2-rotisserie chickens, angel hair spaghetti sauteed in butter and garlic drizzled with olive oil, lastly add tomatoes and cucumber salad. The entire dinner will be around $20.00.
