GALIC PARMESAN POTATOES

You can make these potatoes on the stovetop, but I recommend roasting them. Roasting them will give your potatoes crispy edges and a soft center.  Can I hear you say YUMMY?

GARLIC PARMESAN PPOTATOES

1 1/2 lb. new potatoes, garlic oil, 2 garlic cloves, minced, 1 tsp. Italian seasoning, 1/4 cup parmesan cheese, grated, 1/4 cup white onions, sliced, 1/4 cup salted butter, melted, 2 tsp. green bell pepper, chopped, garnish with 1/4 cup bacon bits and chopped parsley

Preheat the oven to 400 degrees. Fry the bacon until crisps, when cool chop and set aside.  Peel the potatoes and cut them into quarters and mash them.  In a bowl, add the potatoes and the bacon drippings.  Toss and make sure the potatoes are coated in the bacon drippings.  Add the cheese, bell pepper, onions, garlic, Italian seasoning, salt, and pepper.  Toss again.  Get out a baking dish lightly spray the dish with butter-flavored cooking spray, layerbthe potatoes into the pan.

Bake for 25-30 minutes or until the potatoes are tender and the edges are slightly crispy.  Sprinkle cheese on top. Cook until the cheese is hot and bubbly.  Garnish with chopped parsley and bacon bits.
