I was thinking about my Mamma today, one of the things I giggled and thought about was her fried apple pies. Here is her quick and easy recipe.

FRIED APPLE PIES
2 (8-piece) refrigerator flaky biscuits, 2 ( 5 oz.) packages dried apples, 1 (21 oz.) can apple pie filling, 3 cups water, 1/4 cup brown sugar, 1 1/2 teaspoons apple pie spice, 1/4 teaspoon ground mace, 1/8 teaspoon salt, vegetable oil for frying.
Get out a heavy pot add the apples, water, and sugar. Cook for 45 minutes to an hour or until all the liquid is cooked out and the apples are soft. Add the can of apple pie filling, apple pie spice, and salt, mix well. Taste, add seasoning if needed. Roll out the biscuits on a floured surface to the size of a coffee saucer. Fill the center to the edge of the dough. Wet the edges of the dough with water, fold over then crimp the edges with a wet fork. Get out a heavy skillet, add the shortening, heat the oil to 370 degrees. Fry the biscuits until golden brown on both sides. Remove from skillet and drain. Lightly sprinkle with powdered sugar, serve hot with a scoop of vanilla ice cream.
