This recipe is dedicated to Robi and Xavier, my brussel sprout lovers
1 1/2 lbs. brussel sprouts, 6 slices bacon, fried and crumbled, 3 T. red onions, finely diced, 1/4 lb. feta cheese with chives, crumbled, and bacon vinaigrette.
Always look for sprouts that have tight heads and are firm. Rinse them off in cold water. Set them aside to drain. Get a sharp knife, cut off the stem and throw it away. If you have any leaves that are blemished, throw them away. Cut the sprouts in half lengthwise.
Add 2 tablespoons of vegetable oil to a skillet and lightly fry the sprouts. Drain the sprouts on a wire rack. Pour the sprouts into a bowl and toss with the vinaigrette. Add the onions and cheese and toss again. Sprinkle crumbled bacon on top.
