GRILLED PIMENTP CHEESE SANDWICH

 

When I was eleven or twelve years old, I babysat my next-door neighbor girls, Cindy and Verna Knight.  Mrs. Knight left instructions on what I should do that day.  She told me to make grilled cheese for their lunch.  I could not imagine how in the world I could grill the cheese and then serve it to them.  We went next door I asked my Mom how to grill and serve grilled cheese.  She had no idea other.  We then called my paternal Grandmother; she laughed uncontrollably and told us it was a sandwich and how to prepare it. That was the first time I had ever had a grilled cheese sandwich.

GRILLED PIMENTO CHEESE SANDWICH

Pimento Cheese:
2 cups extra sharp cheddar cheese, grated, 1/2 cup Munster cheese, grated, 1/2 cup processed cheese, cut into 1/2 inch cubes, 1 (8 oz.) pkg. cream cheese, 1/2 cup mayonnaise, 1/4 tsp. minced garlic, 1/4 tsp. granulated onions, 1 jalapeno pepper, minced, 1 (4 oz.) jar pimento, drained, salt, and white pepper to taste.

Get out the food processor and add all ingredients until thoroughly mixed.  Taste, and adjust dry seasoning as needed.

Sandwich:
3 pieces of bacon fried crispy, 8 pieces of wheat bread toasted with unsalted butter and mayonnaise
