Pistachio nuts are sugar-free, gluten-free, natural, and low in sodium, cholesterol, and fat. I  toss this pesto on pasta. Pesto taste good spread on crostini with Parmesan cheese on top. Next time you have shrimp, use this pesto as your cocktail sauce.

3 cups washed and steams removed collard greens, 3/4 cup parmesan cheese, grated, 1/2 cup pistachio nuts, shelled, 2 garlic cloves, 1 tsp. cajun seasoning salt, 1/4 teaspoon cayenne, 1/2 teaspoon white pepper, 1/4 cup extra virgin olive oil, 1/4 cup garlic oil.

Add all the dry ingredients into the food processor and pulse until finely chopped.  Gradually add the oils until the mixture is smooth. Taste and adjust dry seasoning if needed.
