
Today is Monday. I will watch the Rams vs. the Packers and eat a sausage and pepper sandwich. I have a cup of red beans left over from last week; I will take them out of the freezer, heat them up and serve them on the side of my sandwich with a glass of red wine. Let’s go, Rams II want you to win this game.
1/4 cup olive oil, 1 lb. country sausage, 1/4 cup red and yellow bell peppers thinly sliced, 1/2 cup red onions sliced, 1/2 cup fresh cilantro leaves, 2 large tomatoes, sliced, 3 dill pickles, sliced, 1/4 tsp minced garlic, 1/4 cup red wine, 1/4 tsp. red pepper flakes,6-8 lettuce leaves, 6 sandwich rolls, toasted.
Heat the oil in a heavy skillet and cook the sausage until crusty brown on all sides. Remove from the skillet and set aside. Drain the oil from the skillet, and add the wine, tomatoes and pepper flakes. Add the sausage to the skillet, and cook for 3-5 minutes. Toast the sandwich buns, and It’s time to assemble the sandwich. Spread a thin layer of mayonnaise on one side of the bun and a thin layer of Italian spaghetti sauce on the other side. Add the sausage, peppers, onions, cilantro, cherry tomatoes, and lettuce and serve.
