
3 egg yolks, 1 3/4 cups self-rising flour, 1/2 tsp. baking sod, 1/2 tsp. sea salt, 1 3/4 cups low-fat buttermilk, 1/4 cup heavy whipping cream, 4 large yellow onions, 3-4 inches in diameter, vegetable oil for frying
Peel and cut the onions into 1/4-inch slices. Separate the onion slices into rings, and set aside. Get out a bowl, add the egg yolks, and slightly beat. Add the flour, baking soda, and salt. Mix well. Slowly add the buttermilk and whipping cream mixing the whole time until you get a paste. Get out a skillet add about 3-3 1/2 inches of oil. Heat the oil to hot or 375 degrees. Dip the onion rings into the batter. Drop the rings into the hot oil. Fry for 4-5 minutes or until the rings are light brown. Remove from the oil and drain on per towels. Put the rings back into the hot oil and fry for another minute or two or until they are crispy. Remove from the oil and lightly sprinkle with cajun seasoning salt.
