WHITE PINEAPPLE SODA CAKE

My niece Octavia (Buck Wild) has shared her recipe with us.  She is an excellent cook.  This recipe is relatively inexpensive and easy and quick to make.  You probably have all the ingredients in your pantry now.

1 ( 15.25 oz.) box white cake mix, 1/2 cup oil, 1 (12 oz.) can pineapple soda, 3 eggs, nonstick baking spray.

Preheat oven to 350 degrees.  Spray a loaf pan with nonstick cooking spray, set aside.  Get out a bowl and a whisk.  Add the cake mix, eggs, oil, and soda pop.  Whisk until everything is well blended and smooth.  Pour into the loaf pan and bake for 25-30 minutes or until the cake starts pulling away from the pan’s sides.  To make sure the cake is done, insert a toothpick into the center of the cake if it comes out clean, the cake is done.  Remove from the oven and cool.  This cake can be served with or without a drizzle.  I prefer without the drizzle, but if you want icing/drizzle check out the recipe below.

POWDERED SUGAR VANILLA DRIZZLE

1 cup powdered sugar, sifted 2-times, 1/4 tsp. vanilla extract, 1 T. pineapple juice, or soda pop.  Get out a bowl, add the sugar, vanilla, and juice.  Mix using a wooden spoon.  Add juice or soda pop until you have 1/2 cup of this drizzling batter.
