I had chicken tacos Saturday. I am going to repurpose the leftover chicken and make an Asparagus and Chicken Salad
2 lbs. fresh asparagus, 1 T. sesame oil, 1/2 T. garlic oil, 1/2 tsp. Cajun seasoning salt, 1/4 tsp. white pepper, 1/4 cup low sodium chicken broth, 1 tsp. soy sauce, 1/2 tsp. spicy orange sauce, 2 cups leftover chicken, 1 1/2 apple cider vinegar.
Remove the chicken from the refrigerator, set aside. Wash the asparagus in cold water, peel it with a vegetable peeler, and cut it diagonally into 1-inch pieces. Add the oil to a skillet. When the oil is very hot but not smoking, add the asparagus and fry for approximately 2 minutes. Add the salt and pepper cook for another minute. Add the broth, soy sauce and orange sauce. Cook another minute. Remove the skillet from the heat add the chicken. When you are ready to serve, add the vinegar and toss.
