GRITS CASSEROLE

1 pound turkey breakfast sausage, 1/4 teaspoon red pepper flakes, 1/2 teaspoon ground sage, 2 cups chicken broth, 3 cups evaporated, milk,  1 cup water, 3/4  teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon minced garlic, 1 cup uncooked grits, 2 cups cheddar cheese, shredded, 2 1/2 salted butter, and 3 large eggs.

Get out a skillet, add the sausage.  Cook for 7-9 minutes or until there is no pink.  Add the pepper flakes and sage, mix well.  Taste.  Drain the grease off.  Get out a bowl, add the eggs and beat.  Add the eggs and 1/2 cup of evaporated milk to the sausage, mix well set it aside.  Get out a saucepan, add the chicken broth, remaining milk, water, minced garlic, salt, and pepper bring to a rapid boil.  Reduce to a simmer, slowly add the grits, mix well.  Put a lid on the pan, cook for 5-7 minutes, stir the pot occasionally.  Add 1 cup of cheese and butter.  Stir until the cheese melts.  Remove from the heat, add the sausage mixture, mix well.  Preheat oven to 350 degrees.  Get out a casserole dish, spray the dish with non-stick cooking spray.  Pour the grit mixture into the casserole dish.  Evenly sprinkle the remaining cheese on top.  Bake uncovered for 25-28 minutes or until the center is set and the cheese is melted and
bubbly.
