FRENCH FRIED SWEET POTATOES
4 medium sweet potatoes, 2 T. cornstarch, 1/4 cup sugar, 1/4 tsp. salt, 1/4 tsp. nutmeg, 1/4 tsp. cinnamon sugar, vegetable oil for frying
Peel and slice the potatoes like you would cut russet potatoes for frying. Get a bowl, add the potatoes, and cover them with cool water. Soak the potatoes for 45-60 minutes. This step gets rid of some of the starch. Remove them from the water and dry them completely with paper towels. Sprinkle the cornstarch over the potatoes. Get out a heavy skillet, and add the oil heat to 375 degrees. Add the fries and cook until golden brown. Drain on paper towels and sprinkle the sugar, nutmeg, cinnamon, and salt.
