My granddaughter Roo called me this morning, she asked for my macaroni and cheese recipe. Roo is my firstborn granddaughter. My Dad gave her the nickname Roo. She was the sweetest little girl, that was always dancing and looking for trouble to get into that’s how she got her name
MACARONI AND CHEESE
1 (1 lb.) package large elbow macaroni, 1 1/2 sticks butter, 3 1/2 cups evaporated milk, 1 (4 oz.) package cream cheese, 3 1/2 cups sharp cheddar cheese, grated, 2 1/2 cups monteray jack cheese, grated, 1/2 tablespoons salt, 1/4 tablespoon pepper
Preheat oven to 325 degrees. Prepare the pasta according to the package directions; drain and set aside, reserve 3 tablespoon pasta water. Get out a heavy pot, add the butter when the butter melts add the milk, cream cheese continue to stir until smooth. Add 2 1/2 cups of the cheddar cheese and 2 cups of the monteray jack, continue to stir until melted and smooth. Add salt and pepper to taste. Get out a baking dish. Pour the pasta mixture into the baking dish. Bake for 7-10 minutes, remove from the stove evenly add the remaining cheese on top, return to the oven bake for another 5 minutes or until the cheese is bubbly and lightly golden brown.
