MACARONI AND CHEESE

The 4th of July is coming up I will take Macaroni and Cheese to
dinner.  Here is my recipe

MACARONI AND CHEESE

1 (1 lb.) package large elbow macaroni, 1 1/2 sticks butter, 1 (12 oz.) can evaporated milk, 1/2 cup heavy whipping cream, 1 (4 oz.) package cream cheese, softened,  3 cups sharp cheddar cheese, grated, 2
cups monterey jack cheese, grated, 2 cups cheddar cheese, grated, 2 sticks
butter, 2 eggs, beaten, 1/2 T. salt, 1/2 T. pepper.

Preheat oven to 350 degrees.  Prepare the pasta according to the package directions; less 3 minutes.  You want the noodles to be al dente.  Drain the noodles and set them aside, do not rinse them.  Get out a heavy pot and add the butter when the butter melts add the milk, whipping cream, eggs, and cream cheese continue to stir until smooth and thick.  Add all the cheese and cook until the cheese melts.  This mixture is your cheese sauce.  It’s now time to do the unauthorized cheese test.  If this mixture screamescremes s  makes you say cheese out loaud good if not add sime more cheese.  Pour the cheese sauce over the macaroni and mix well. Taste.  Adjust salt and pepper if needed.  Grate another 1-1 1/2 cups sharp cheddar cheese and monterey jack for topping set aside. Get out a baking dish.  Spray the baking dish.  Evenly pour the pasta mixture into the baking dish.  Bake for 20-25 minutes uncovered.
 remove from the oven add the reserved cheese on top, return to the oven bake for another 5-7 minutes or until the cheese is bubbly and lightly toasted
