deviled crab cakes

DEVILED CRAB 

1/2 pound soda cracker, 4 eggs, 1 stick unsalted butter, 1/4 cup green bell pepper, 1/2 cup celery, chopped, 1/2 cup red onion, chopped, 1 teaspoon seafood seasoning, 1/2 teaspoon black pepper, 3 tablespoons yellow mustard, 4 tablespoons mayonnaise, 1 1/4 teaspoon baking powder, 1 tablespoon Worcestershire sauce, 1 tablespoon fresh lemon juice, 1/4 teaspoon hot sauce, 1 pound lump crab meat, 1 cup seasoned self-rising flour, 1/2 tablespoon seasoning salt, 1/4 tablespoon black pepper, 1/2 tablespoon granulated garlic, 1/4 tablespoon cayenne, oil for frying.

Get out a large bowl, crumble the crackers into the bowl.  Add the rest of the ingredients, except the crab meat, seasoned flour and oil, mix well.  Fold in the crab meat careful not to breaks up the crab too much.  Scoop out an ice cream scooper of the crabmeat mixture roll into a ball then flatten out to a cake, roll in the seasoned flour and deep fry until the cakes are golden brown.
