FRIED BUFFALO TURKEY WINGS
4 turkey wings, salt, pepper, granulated garlic, poultry seasoning. Preheat the oven to 400 degrees. Split the wings into flats, drumettes and tips (the tip is my favorite part). Wash off and clean the meat, make sure there are not feathers. Drizzle a little oil over the meat, generously sprinkle with the salt, pepper, garlic, and poultry seasoning. Place the wing pieces on a baking sheet and tent. Put in the oven for approximately 1 hour 30 minutes. Remove from the oven allow to cool. While the meat is cooling get out 1 cup of self-rising flour, add the flour to a paper bag along with some pepper, garlic, and poultry seasoning, shake the bag to evenly distribute the seasonings. Get out a large heavy skillet, add 2 1/2 inches of oil, heat the oil to 450 degrees. Remove the wing pieces from the seasoned flour, shake off the excess flour and add them to the hot oil. Fry until the wings are a deep golden brown and crispy. Remove from the oil and rest a wire rack.
Serve with carrot and celery sticks. Dipping Sauce: 1/2 cup blue cheese salad dressing, 1/4 cup mayonnaise, 1/2 cup blue cheese, crumbled, 3 tablespoons, sour cream, 2 teaspoons fresh lemon juice, salt, and pepper to taste. Pepper Sauce: 1 1/2 sticks of salted butter and 1 1/2 cup hot sauce. Add the butter and hot sauce to a saucepan and cook on low heat until the butter melts.
