HABANAY POTATOES

These are yummy tummy HaBaNay Potatoes.  I frequently go to breakfast with my favorite nephew/cousin Xavier.  When we go to breakfast, he frequently ordered fried potatoes and onions, with bell peppers, tomatoes, cheese, bacon, sausage, and ham topped with 2 over easy eggs with crispy plantains on the side.

HaBaNay Fried Potatoes

Fry 3 pieces of bacon until crispy.  Remove the bacon from skillet set aside; save bacon drippings. Dice a 2-ounce piece of smoked ham.  Add the ham to the skillet and fry. Remove the diced ham from skillet and set aside.  In the same skillet, fry 2 breakfast link sausages, remove from skillet, coarsely chop set aside.  Wash skillet.  Scrub 3 medium sized red skinned potatoes put the potatoes in a grocery store carry-out bag. Put the bag in the microwave on the potato setting. Slice the potatoes and dump them into the skillet with 2 tablespoons of bacon drippings and 1 tablespoon of butter.  Brown the potatoes add  1/4 cup of thinly sliced sweet Vidalia onions, and 1/3 cup thinly sliced bell pepper. Continue to fry until the potatoes are browned, crispy and the onions sweat.  Add 1 coarsely chopped Roma tomato, 1/4 cup grated mild cheddar cheese, link sausages, and the diced ham.  Mix well until the cheese melts. Add salt, pepper, granulated garlic to taste. Put the potatoes on the plate. Fry 2 large over easy eggs, add the eggs on top of the potatoes. Crumble the bacon on top of the eggs. HaBaNay Fried Potatoes are served with a cup of coffee and crispy plantains and sour cream on the side.
