POPOVERS

This is a very old recipe given to me better than 50-years ago by my great aunt Mary.  Whenever I make these popovers, I think about her.  Her kitchen was always full of fresh baked goods and fried, crispy bacon.

1 cup flour, 1/4 teaspoon salt, 2 eggs, beaten, 1/2 cup whole milk, 1/2 cup evaporated milk, 1 tablespoon vegetable oil.

Preheat the oven to 450 degrees. Get out a sifter and a bowl.  Measure out your flour, sift 3-times.  Remeasure and add the sifted flour to the bowl along with the salt, mix well.  Get out another bowl, add the eggs, shortening, and milk, mix well until smooth.  Add to the flour mixture.  Lightly grease an 8-cup muffin tin.  Fill each tin 3/4 full put in the oven for approximately 20 minutes.  Reduce the temperature to 350 degrees continue to bake for another 15 minutes or until they split and are golden brown.
