BOLOGNA SANDWICH
1 lb. bologna, 1/4 cup dill pickle relish, 1/4 cup red onions, finely diced, 4 hard-boiled eggs, chopped, 3/4 cup mayonnaise. Get out a skilled add 2 tablespoons of unsalted butter. Slice the bologna into 1 1/2 inch slices. Fry the bologna until it is charred around the edges. Get a bowl, add the mayonnaise, chopped eggs, relish and onions, mix well. Spread this mixture on toasted sourdough bread. Garnish with romaine lettuce and tomato slices.
