ORKA, CORN AND TOMATO CASSEROLE

2 cups whole kernel frozen corn, 2 cups frozen cut fried okra, 3  fresh tomatoes, peel and remove seeds, and diced, 1 T. tomato paste, 1/2 cup red onions, chopped, 3 T. bacon drippings, 1/4 cup sour cream, 1 tsp. salt, 1/2 tsp. black pepper, 1 T. granulated garlic, 1/2 tsp. sugar, 1 cup sour cream potato chips, crushed with a rolling pin.

Preheat the oven to 350 degrees. Get out a baking dish, and spray the baking dish with cooking spray.  Get out a skillet, add the bacon drippings, and onions cook until the onions are tender.  Add the okra, and cook till crispy.  Add the corn, tomatoes, tomato paste, sour cream, salt, pepper, garlic, and sugar, mix well. Taste, adjust dry seasoning if needed.  Dump this mixture into the baking dish.  Bake for 20-25 minutes, remove from the oven, evenly spread the chips on top. Return to the oven turn to broil cook until the chip brown.
