Season both side of your fish with salt, pepper, ground cumin and smoked paprika. Gently rub the seasoning into the fish, set aside. Put about 2-3 tablespoons of butter flavored shortening into a saute skillet then heat to medium or until the shortening starts to simmer around 350 degrees. Add the fish and cook for approximately 5-6 minutes, then flip the fish over and cook on that side for another 5-6 minutes, when the fish is golden brown and firm remove from the skillet.
SWEET GRAPE TOMATO SALSA
1 cup grape tomatoes, cut in half, 1 cup green seedless grapes, cut in half, 1 cup black seedless grapes cut in half, 1 cup diced papaya, 1/2 cup diced mango, 1/2 cup diced red onions, 1/4 cup chopped green bell pepper, 2 garlic cloves, minced, 2 tablespoons diced salerno chili peppers, 2 mint leaves, diced, 1 tablespoon olive oil, 1 1/2 teaspoon sea salt, mix well, refrigerate for at least 45-minutes before serving. Top the fish with this delicious salsa.
