FOCACCIA BREAD

It’s HOT I don’t feel like cooking.  I am going to have a light but belly filling vegetarian sandwich for lunch.

4 pieces of toasted focaccia bread, 1/4 cup prepared pesto, 2 tablespoons mayonnaise, 1/4 cup sprouts, 1/2 cup spinach, 1 large avocado, mashed, mixed with 1 Asian pear, chopped, 2 firm tomatoes, thinly sliced, 2 Persian cucumbers, thinly sliced, 1/4 cup cilantro, 4 tablespoons red onions, thinly sliced, 4 slices of swiss cheese, 4 slices pepper jack cheese, 2 tablespoons feta cheese, crumbled, 2 tablespoon sunflower seeds, salt and pepper to taste. Serve with chilled orange slices on the side.
