BROWN APPLE BETTY

It’s fall, we are going to celebrate the season change by making a Brown Apple Betty.    This a very rustic dish that dates back to the early 1900s. According to Wikipedia, Brown Apple Betty was one of the White House’s favorite desserts of Ronald Regan.

BROWN APPLE BETTY

1/2 stick butter, melted, 4 cups graham crackers crumbs ( 1 inter package of graham crackers equals 1 1/4 cups of crumbs), 1/2 pound Gala apples, peeled, cored and diced, 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, 1/2 cup unsweetened apple juice, 1/2 cup molasses, juice and rind of a lemon.

Preheat oven to 300 degrees. Lightly grease an 8×8 baking dish, set aside.  Add the crackers to the food processor and grind o coarse crumbs, melt 2 tablespoons of butter add to the crackers and mix well. Get out a bowl, add the apples, lemon juice and rind, molasses, salt, cinnamon, and nutmeg, mix well, set aside.  Dump approximately 1/3 of the cracker crumbs in the bottom and the sides of the baking dish.  Top with 1/2 of the apple mixture.  Add another third of the cracker crumbs.  Add the rest of the apple mixture, top off with the rest of the bread crumbs.  Sprinkle the apple juice on top.  Dot the remaining butter on top.  Cover the dish with foil and bake for 45 minutes.  Remove the foil return to the oven. Adjust the temperature to  375 degrees and cook another 10-15 minutes or until the top is browned.
