MEATLOAF

Meatloaf is a traditional German dish. At my house, meatloaf is considered comfort food; that is s served a couple of times a year.  The leftovers meat was made into sandwiches.  I like bacon-wrapped meatloaf with twice-baked potatoes, green beans, and a simple green salad. 

MEATLOAF

4 pieces of stale bread,1/2 cup yellow onions, finely chopped, 1/4 cup bell pepper, finely chopped, 1 celery stalk, finely chopped, 2 pounds ground chuck or ground turkey, 2 eggs, beaten, 1 tablespoon flour, 1 (10 3/4 oz.) can cream of mushroom soup, 1/4 cup ketchup,  1 tablespoon poultry seasoning, 1 teaspoon dried thyme, 1 tablespoon beef bouillon, 1 teaspoon black pepper, 2 1/2 teaspoons minced garlic, 1 tablespoon Worcestershire sauce, 1 package dry onion soup mix, 10 pieces of thinly sliced bacon.

Pour a couple of teaspoons of milk in a bowl, add the bread, and soak, then crumble the bread into the meat.  Stir in the rest of the ingredients.  Mix well.  Form meat mixture into a loaf shape in the baking dish.  Place the bacon slices on top of the loaf, be sure to tuck the end pieces underneath the loaf. Pour half the sauce over the loaf and bake at 350 degrees for 1 hour 30 minutes. Pour the remaining sauce over the meat for the last 15 minutes.

SAUCE

1/2 cup catsup, 1/2 tablespoons mustard, 1 tablespoon dry spaghetti mix, and 1/4  cup brown sugar mix  until there are no lumps. Set aside.
