
Bacon makes everything better. AVOCADO SOUP
This soup is served in the avocado shells. It will add fufu to your meal, and it’s a party pleaser. To make the shells sit flat, cut a slice from the stem end of the avocado. Scoop out the flesh and discard the seed. Place the shells in the freezer.
2 large avocados, 2 cups chicken broth, 1/2 tablespoon fresh cilantro, chopped, 1 small jalapeno, seeded and finely chopped, 2 cups heavy whipping cream, 2 tablespoons cognac, 2 tablespoons pink champagne
Peel avocados and dice. Get out the food processor add the avocado, jalapeno pepper, cilantro, and chicken broth, until smooth. Pour everything into a glass bowl, salt, and pepper to taste. Gradually fold in whipping cream. Chill soup for at least 2 hours. Fry bacon until crispy, crumble, and set aside. Add cognac and champagne just before serving. Spoon soup into frozen avocado shells. Top with crumbled bacon.
