PEANUT BUTTER COOKIES

1/2 cup salted butter, 1/4 cup creamy peanut butter, 1/4 cup crunchy peanut butter, 1 large egg, beaten,  1/2  cup sugar, 1/2  light brown sugar, packed, 1 T. cinnamon,  1 T. vanilla extract, 1 1/4 cup cake flour, 3/4 tsp. baking soda, 1/2 tsp. baking powder,  1/4 tsp. salt.

Cream the butter, peanut butter, sugar, cinnamon, egg, and vanilla.  Sift the flour, baking powder, and baking soda together, and set aside.  Blend everything into a creamed batter.  Scoop out a heaping tablespoon of the batter and shape it into a ball.  Get out a plate add 1/2 cup of sugar.  Roll the cookie ball in the sugar.  Preheat the oven to 375 degrees.  Place the cookie ball on a cookie sheet 2 inches apart.  Mash each ball with a fork to flatten it.  Bake for 10-12 minutes or until they are light brown.
